  • 1⅓ cups pancake mix

Preparation
  1. Start by freezing the marshmallows so they stay firm when they hit the hot oil.
  2. Heat your oil until it’s hot enough for frying — about 350°F (175°C).
  3. In a bowl, whisk together the milk, egg, and vanilla until smooth.
  4. In another bowl, combine the pancake mix, then pour in the wet ingredients, stirring gently until you get a thick batter.
Cooking
  1. Coat the frozen marshmallows in the batter.
  2. Drop them into the hot oil and fry until golden brown, turning once.
  3. Let them rest on paper towels, then serve warm.
  4. Dust with powdered sugar or load with whipped cream, chocolate sauce, and sprinkles.

Notes

Ensure your oil is hot enough before adding the marshmallows to avoid sogginess. You can experiment with different coatings and flavors in the batter.
