Preparation
- Preheat your oven to 350°F (175°C) and grease two round cake pans.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a large bowl, beat the softened butter and granulated sugar until pale and fluffy.
- Add egg whites one at a time, mixing thoroughly after each addition.
- Stir in vanilla extract and a few drops of pink food coloring.
- Gradually alternate adding dry ingredients and milk, mixing until smooth.
- Divide batter evenly between prepared cake pans.
Baking
- Bake for 28 to 32 minutes, or until a toothpick inserted comes out clean.
- Allow cakes to cool completely before assembling.
Filling and Frosting
- In a small saucepan, heat guava nectar over medium heat, whisk in cornstarch, and let cool.
- Beat cream cheese until smooth, then mix in powdered sugar and guava extract.
- Whip heavy cream until stiff peaks form and gently fold into the cream cheese mixture.
- Spread a layer of guava sauce on top of one cake layer, follow with guava cream filling.
- Place second cake layer on top and frost entire cake with pink whipped frosting.
- Decorate with edible tropical flowers.
Serving
- Chill the cake for at least one hour before serving.
- Serve cold, optionally with fresh fruit or additional guava sauce.
Notes
For an extra tropical flair, infuse the cake layers with coconut extract. If guava is not available, use other fruit nectar. Ensure ingredients are at room temperature for better mixing.
