Decadent Dubai Chocolate Pistachio Bars

Ingredients
  

For the base
  • 1 cup crushed digestive biscuits or graham crumbs
  • 5 tablespoons melted butter for the base
  • 2 tablespoons sugar
  • 1/2 teaspoon cardamom optional
For the pistachio layer
  • 1 cup raw pistachios
  • 1/2 cup sweetened condensed milk
  • 2 tablespoons melted butter for the pistachio layer
  • 1 teaspoon vanilla extract
  • 1 pinch salt
For the chocolate topping
  • 1 1/2 cups dark or milk chocolate chips
  • 2 tablespoons butter for the chocolate topping
  • 1/4 cup chopped pistachios for garnish

Method
 

Preparation
  1. Preheat your oven to 180 degrees C (350 degrees F) and line a small square pan with parchment paper.
  2. In a mixing bowl, combine crushed biscuits, melted butter, sugar, and optional cardamom until well mixed. Press this mixture into the prepared pan to form the base, and chill.
Pistachio Layer
  1. Blend raw pistachios into a coarse crumb, then mix with sweetened condensed milk, melted butter, vanilla, and a pinch of salt until thick.
  2. Spread the pistachio mixture over the chilled biscuit base.
Chocolate Topping
  1. Melt chocolate chips and butter until smooth, then pour over the pistachio layer.
  2. Sprinkle chopped pistachios on top before chilling in the refrigerator for at least two hours.
Serving
  1. Once set, lift the bars from the pan and cut into squares or bars. Serve on plates, perfect with a warm cup of chai or chilled lemonade.

Notes

Ensure pistachios are fresh. For variety, substitute half of the pistachios with almonds or hazelnuts. Experiment with different chocolate types.
