Preparation
- Preheat your oven to 180°C (160°C fan forced). Grease and line the base of a 22 cm square cake pan.
- In a bowl, toss the chopped dates with bicarbonate of soda. Pour boiling water over and let sit until cooled.
Making the Pudding
- In a separate bowl, beat together the butter and 3/4 cup brown sugar until light and creamy.
- Add the lightly beaten eggs one by one, beating well after each addition. Add vanilla essence.
- Sift in self-raising flour, ground cinnamon, and orange rind. Gently incorporate the cooled date mixture.
- Pour the batter into the prepared cake pan and bake for 30 to 40 minutes, until a skewer comes out clean.
Making the Caramel Sauce
- In a small saucepan, combine the caramel sauce ingredients and simmer for 2-3 minutes until thickened.
Serving
- Serve Date Pudding warm, cut into squares, drizzled with caramel sauce. Optional: Pair with vanilla ice cream or whipped cream.
Notes
For added flavor, consider including nuts. Variations can include different dried fruits or spices.
