Ingredients
  

Main Ingredients
  • 1.5 cups pitted Medjool dates Soft dates provide the best texture.
  • 3/4 cup raw almonds Toast for deeper flavor if desired.
  • 1/2 cup rolled oats Use certified gluten-free oats for a gluten-friendly option.
  • 1/3 cup cocoa powder
  • 2 Tbsp almond butter Can substitute with tahini for variations.
  • 1 tsp vanilla
  • pinch salt
Optional Toppings
  • cocoa powder For dusting.
  • shredded coconut For dusting or coating.
  • chopped nuts For coating.

Method
 

Preparation
  1. Soften the dates in warm water for 10 minutes if needed, then drain and pat dry.
  2. Toast the almonds if desired and let them cool.
  3. Process the almonds in a food processor until crumb-like.
  4. Add the pitted dates and process until a paste forms, scraping the sides as needed.
  5. If too dry, add water or nut butter as needed.
  6. Add cocoa powder and salt, pulse to combine.
  7. Add rolled oats and almond butter, pulse until the mixture is cohesive.
Forming the Balls
  1. Scoop out tablespoon-sized portions and roll between palms to form balls.
  2. Optionally roll the balls in desired toppings.
  3. Chill on a tray for 20-30 minutes to set or enjoy immediately.

Notes

For a better texture, let the balls sit at room temperature for 10–15 minutes before eating. Store airtight in the fridge for up to 10 days, or freeze for up to 3 months.
