Ingredients
  

Shrimp Mixture
  • 1 lb shrimp, peeled, deveined, finely chopped Make sure to pat dry to avoid excess moisture.
  • 1 cup shredded mozzarella cheese Can be substituted with Gruyère or fontina.
  • 1/2 cup cream cheese, softened
  • 2 cloves garlic, minced
  • 2 tbsp chopped parsley Plus more for garnish.
  • 1 tsp paprika Add cayenne for spice if desired.
  • Salt & pepper to taste
Breading
  • 1 cup all-purpose flour Can be substituted with gluten-free flour.
  • 2 eggs beaten
  • 1 cup breadcrumbs, panko preferred Use panko for the best texture.
  • Oil for frying Use neutral oil with a high smoke point.

Method
 

Preparation
  1. In a bowl, mix chopped shrimp, mozzarella, cream cheese, garlic, parsley, paprika, salt, and pepper until smooth.
  2. Scoop small portions and roll into bite-sized balls.
Breading
  1. Dip each ball into flour, then egg, then breadcrumbs.
  2. Chill the formed balls for 15-20 minutes before frying.
Cooking
  1. Heat oil to medium-high.
  2. Fry bites until golden brown, about 2-3 minutes.
  3. Drain on paper towels and sprinkle with parsley.

Notes

Serve immediately while the centers are molten, with a squeeze of lemon or suitable dipping sauces. For storage, refrigerate in an airtight container for up to 2 days or freeze for longer keeping.
