Ingredients
  

Doughnut Batter
  • 2 cups all-purpose flour Sifted for aeration
  • 2 teaspoons baking powder Fresh for best results
  • 1/2 teaspoon salt
  • 1/4 cup sugar
  • 1/2 cup whole milk At room temperature
  • 2 large eggs At room temperature
  • 1/2 cup sour cream At room temperature
  • 1 teaspoon vanilla extract
  • 1/4 cup unsalted butter, melted
Crème Brûlée Topping
  • 1 cup heavy cream Warm but not boiling
  • 1/4 cup sugar For caramelizing
  • Optional: powdered sugar for dusting For extra touch before serving

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and grease a doughnut pan.
  2. In a large bowl, mix the flour, baking powder, salt, and sugar together.
  3. In another bowl, combine the milk, eggs, sour cream, vanilla extract, and melted butter.
  4. Slowly add the wet ingredients to the dry ingredients. Stir until just combined.
  5. Fill each doughnut mold about halfway with the batter.
Baking
  1. Bake for 10-12 minutes or until the doughnuts are golden and a toothpick comes out clean.
  2. Let the doughnuts cool slightly before removing them from the pan.
Topping
  1. To make the crème brûlée topping, heat the heavy cream in a saucepan until warm but not boiling.
  2. In a bowl, whisk together egg yolks and sugar until smooth. Slowly pour in the warmed cream, mixing constantly.
  3. Pour the mixture over the cooled doughnuts.
  4. Allow the doughnuts to chill in the fridge for at least an hour.
  5. Before serving, sprinkle sugar on top and use a kitchen torch to caramelize the sugar until it’s golden and crispy.

Notes

Make sure your ingredients are at room temperature for the best results. Don't overmix the batter; it should be just combined for fluffy doughnuts. Practice caution when using the kitchen torch to caramelize the sugar. You can use flavored extracts like almond or lemon for a twist.
