Ingredients
  

Main Ingredients
  • 1 lb cooked shrimp, peeled and deveined Use fresh or frozen shrimp, thawed if using frozen.
  • 2 large avocados, diced Best when ripe.
  • ½ cup red onion, finely diced
  • ¼ cup fresh cilantro or parsley, chopped Can substitute with your choice of herbs.
Dressing Ingredients
  • 2 tbsp fresh lime juice For a zesty flavor.
  • ¼ cup mayonnaise
  • 2 tbsp sour cream or Greek yogurt For creaminess.
  • 1 clove garlic, minced
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp paprika

Method
 

Preparation
  1. Dice the avocados, chop the red onion, and pat the shrimp dry.
Make the Dressing
  1. In a bowl, whisk together mayonnaise, sour cream, lime juice, garlic, paprika, salt, and pepper until smooth.
Combine the Salad
  1. Add shrimp, avocado, red onion, and cilantro to a large mixing bowl. Gently toss.
Coat with Dressing
  1. Pour the dressing over the salad and carefully fold everything together until evenly coated.
Chill and Serve
  1. Refrigerate for 15 minutes before serving.

Notes

Serve chilled, garnished with fresh herbs and lime. Store leftovers in an airtight container and consume within a day to prevent browning.
