Ingredients
  

For the dip
  • 2 heads garlic (cloves peeled)
  • 2 tbsp sesame seeds
  • 120 ml olive oil (enough to fully cover garlic and seeds in baking dish)
  • 1 sprig rosemary
  • 200 g cream cheese
  • 1 tbsp mayonnaise
  • 3 tbsp Parmesan (finely grated)
  • 1 tsp honey
  • ½ lemon juiced
  • 2 tbsp fresh chives (chopped)
  • salt and pepper (to taste)
  • chili flakes (optional, to taste)
  • garlic confit cloves
  • reserved garlic–sesame oil from roasting

Method
 

Preparation
  1. Preheat your oven to 180°C (350°F). Place the peeled garlic cloves in a small baking dish, add the sesame seeds and rosemary sprig, then generously cover everything with olive oil.
  2. Roast for 25–30 minutes, until the garlic is soft, golden, and fills your home with a heavenly aroma.
Mixing Ingredients
  1. Once the garlic has cooled just a bit, transfer the roasted garlic and sesame seeds into a bowl.
  2. Add the cream cheese, mayonnaise, Parmesan, honey, lemon juice, chopped chives, salt, chili flakes, and black pepper to suit your taste.
Final Touches
  1. For a rustic feel, use a fork to mash everything together until it’s smooth yet retains a charming texture.
  2. Spoon the mixture into a serving bowl and top with garlic confit cloves, fresh chives, a sprinkle of chili flakes, and a drizzle of the reserved garlic-sesame oil.

Notes

Taste as you go! Adjust seasoning and lemon juice to your preference. Add more honey if you desire sweetness. To spice things up, try adding smoked paprika or cayenne pepper.
