- In a bowl, mix the sliced chicken with olive oil, garlic powder, oregano, smoked paprika, lemon juice, salt, and pepper, stirring to coat every piece. Let it marinate for about 15 to 30 minutes.
Cooking Chicken
- Heat a skillet over medium-high heat and add the marinated chicken. Cook for about 3 to 4 minutes per side, until golden and cooked through. Remove from heat.
Assembling Flatbreads
- Warm the flatbreads in a dry skillet or microwave until soft. Spread tzatziki on each flatbread.
- Layer on the chicken, diced cucumbers, halved cherry tomatoes, and red onion. Sprinkle with crumbled feta and fresh dill or parsley.
- Slice into generous portions and serve warm.
Notes
Adjust seasoning to preference; you can add a splash of red wine vinegar to the tzatziki for an extra flavor kick. For a quicker option, pre-cooked chicken or rotisserie chicken can be used.
