Preparation
- Remove the cream cheese from its packaging and place it on a microwave-safe plate. Microwave on high for about 15 seconds, flip, and heat for another 10 to 15 seconds until softened but not melted.
- In a large bowl, add the softened cream cheese and beat with a hand mixer until smooth and lump-free, about 1 minute.
- Scoop the marshmallow creme into the bowl using a spoon that has been run under hot water. Add the fresh lime juice and coconut extract, if using.
- Beat the mixture until silky smooth and creamy. Cover tightly and chill in the fridge for about 1 hour.
Serving
- Ensure the fruit is completely dry before serving to allow the dip to cling nicely.
- Serve the dip in a bowl surrounded by a variety of fresh fruits such as strawberries, apple slices, and pineapple chunks. Include crackers or graham sticks for added crunch.
Notes
Experiment with different extract flavors like almond or vanilla for a unique twist. For best results, chill the dip for at least an hour.
