Preparation
- Preheat the oven to 375 degrees Fahrenheit and lightly spray a baking dish with non-stick spray.
- In a mixing bowl, combine the rinsed cranberries, white sugar, brown sugar, orange zest, orange juice, and corn starch. Let this mixture sit for 10 minutes.
Making the Topping
- In a separate bowl, whisk together the flour, sugars, baking powder, and salt.
- Cut in the chilled butter until crumbly, then stir in the boiling water until the batter forms.
Assembly and Baking
- Pour the cranberry mixture into the baking dish and spoon the batter over the top.
- If desired, blend cinnamon and sugar together, and sprinkle over the cobbler.
- Bake uncovered for 40-45 minutes until the topping is golden brown.
Serving
- Allow to cool for 10 minutes before serving warm, ideally with a scoop of vanilla ice cream.
