Ingredients
  

Fruit Filling
  • 12 cups fresh cranberries, rinsed
  • 1/2 cup sugar
  • 1/2 cup brown sugar, packed
  • Zest from 2 oranges
  • Juice from 2 oranges, plus 1/4 cup pulp (if desired)
  • 2 tsp corn starch
Cobber Topping
  • 1 1/2 cups all-purpose flour
  • 1/3 cup brown sugar
  • 1/3 cup sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 stick butter, cut into small pieces
  • 1/3 cup boiling water
  • 1/2 tsp cinnamon (optional)
  • 1 Tbsp sugar (optional for topping)

Method
 

Preparation
  1. Preheat the oven to 375 degrees Fahrenheit and lightly spray a baking dish with non-stick spray.
  2. In a mixing bowl, combine the rinsed cranberries, white sugar, brown sugar, orange zest, orange juice, and corn starch. Let this mixture sit for 10 minutes.
Making the Topping
  1. In a separate bowl, whisk together the flour, sugars, baking powder, and salt.
  2. Cut in the chilled butter until crumbly, then stir in the boiling water until the batter forms.
Assembly and Baking
  1. Pour the cranberry mixture into the baking dish and spoon the batter over the top.
  2. If desired, blend cinnamon and sugar together, and sprinkle over the cobbler.
  3. Bake uncovered for 40-45 minutes until the topping is golden brown.
Serving
  1. Allow to cool for 10 minutes before serving warm, ideally with a scoop of vanilla ice cream.

Notes

For best results, ensure cranberries are fresh. Consider adding a splash of orange liqueur for deeper flavor. You can incorporate other berries for added variety.
