Ingredients
  

Cheesecake Mixture
  • 8 oz cream cheese, softened
  • 1 tsp cotton candy flavoring or syrup
  • 1 cup crushed graham crackers or cookies Flavored options can add an exciting twist.
  • 1 cup whipped topping
  • 1 cup mini marshmallows
Coating
  • 1 cup cotton candy For coating the cheesecake bombs.
  • ½ cup chocolate chips Optional, for drizzling on top.

Method
 

Preparation
  1. Beat the softened cream cheese in a large mixing bowl until smooth and fluffy, about 2 minutes.
  2. Add in the cotton candy flavor and mix until well combined.
  3. Gently fold in the whipped topping with a spatula.
  4. Stir in the crushed graham crackers (or cookies) until just combined.
  5. Fold in the mini marshmallows gently.
  6. Refrigerate the mixture for 30 minutes to firm it up.
Forming the Bombs
  1. Using a cookie scoop, portion out the chilled mixture into 12 equal balls.
  2. Roll each ball gently between your palms to form smooth spheres.
  3. Roll each cheesecake ball in cotton candy until well coated.
  4. If using, melt the chocolate chips and drizzle over the cheesecake bombs.
Serving
  1. Serve immediately or refrigerate for up to 2 hours before serving.

Notes

These can be prepared ahead of time. Mix in pieces of cotton candy or add a splash of vanilla extract for additional flavor.
