  • 1 egg egg

  • 1/2 cup grated cheese (e.g., cheddar or mozzarella)
  • 1/4 cup chopped fresh herbs (e.g., basil or parsley)
For Frying

Method
 

Preparation
  1. In a large bowl, mix the cottage cheese, flour, baking powder, salt, and egg until a cohesive batter forms.
  2. Gently fold in the chopped tomatoes, grated cheese, and herbs.
Cooking
  1. Heat oil in a frying pan over medium heat until shimmering.
  2. Drop spoonfuls of the mixture into the hot oil and fry until golden brown on both sides.
  3. Remove from oil and let drain on paper towels.

Notes

Serve these puffs warm with sour cream or chutney. Store leftovers in an airtight container in the fridge for 2-3 days.
