Preparation
- Preheat your oven to 375°F and prepare a small baking dish by lightly spraying it with oil or lining it with parchment paper.
- In a large mixing bowl, whisk together the flour and baking powder until they’re well combined.
- Add in the cottage cheese, maple syrup, and vanilla, stirring everything together with a wooden spoon.
- Use clean, floured hands to bring the mixture together and form it into a dough ball.
- Lightly flour your work surface and roll the dough out into a rectangle, approximately 10x12 inches.
- In a separate small bowl, mix together the dark brown sugar, melted butter, and ground cinnamon. Spread this filling evenly over the rolled-out dough.
- Starting from the long edge, roll the dough tightly into a log and then slice it into six large cinnamon rolls.
Baking
- Place the rolls in your prepared baking dish and bake for about 25 to 30 minutes until they are golden brown.
- Let them cool for at least 10 minutes, then mix together the powdered sugar and milk to create a glaze.
- Drizzle the glaze over the rolls before serving.
Notes
These rolls are best enjoyed warm, either plain or with glaze. For flavor enhancement, consider adding a pinch of nutmeg or substituting brown sugar with granulated sugar. Feel free to include chopped nuts or dried fruits for added texture and flavor.
