Dough Ingredients
  • 1 1/2 cups all-purpose flour plus a few tablespoons as needed
  • 2 teaspoons baking powder
  • 1 1/2 cups cottage cheese
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 3 tablespoons butter, melted
Filling Ingredients
  • 1/3 cup dark brown sugar
  • 1 1/2 teaspoons ground cinnamon
Glaze Ingredients
  • 1/4 cup powdered sugar
  • 1 tablespoon milk

Method
 

Preparation
  1. Preheat your oven to 375°F and prepare a small baking dish by lightly spraying it with oil or lining it with parchment paper.
  2. In a large mixing bowl, whisk together the flour and baking powder until they’re well combined.
  3. Add in the cottage cheese, maple syrup, and vanilla, stirring everything together with a wooden spoon.
  4. Use clean, floured hands to bring the mixture together and form it into a dough ball.
  5. Lightly flour your work surface and roll the dough out into a rectangle, approximately 10x12 inches.
  6. In a separate small bowl, mix together the dark brown sugar, melted butter, and ground cinnamon. Spread this filling evenly over the rolled-out dough.
  7. Starting from the long edge, roll the dough tightly into a log and then slice it into six large cinnamon rolls.
Baking
  1. Place the rolls in your prepared baking dish and bake for about 25 to 30 minutes until they are golden brown.
  2. Let them cool for at least 10 minutes, then mix together the powdered sugar and milk to create a glaze.
  3. Drizzle the glaze over the rolls before serving.

Notes

These rolls are best enjoyed warm, either plain or with glaze. For flavor enhancement, consider adding a pinch of nutmeg or substituting brown sugar with granulated sugar. Feel free to include chopped nuts or dried fruits for added texture and flavor.
