- In a bowl, combine the flour, cornmeal, baking soda, baking powder, salt and ginger ale. Whisk until smooth.
- Heat the oil to 350°F in a deep-sided skillet.
- Dredge the fish in the batter and fry for 4-6 minutes per side until golden brown and cooked through.
- Drain on a paper towel-lined plate before serving.
Notes
Serve immediately while the crust still crackles. Best accompanied by fries or cabbage slaw. Leftovers should be stored in an airtight container and consumed within 1-2 days.
