  • 1 large can (20 ounces) crushed pineapple, well-drained
  • 1 package (8 ounces) cream cheese, softened Ensure cream cheese is softened for easy blending
  • 1 cup powdered sugar
  • 1 container (12 ounces) Cool Whip, thawed
  • 1 cup miniature marshmallows
  • 1/2 cup chopped pecans or walnuts Optional
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Gather all ingredients in a large mixing bowl.
  2. Blend the softened cream cheese and powdered sugar until smooth.
  3. Slowly add the well-drained crushed pineapple to the cream cheese mixture and fold gently.
  4. Gently fold in the thawed Cool Whip until well combined.
  5. Fold in the miniature marshmallows and the optional chopped pecans or walnuts.
  6. Add the vanilla extract and mix to combine.
  7. Pour the mixture into a serving dish and smooth the top.
  8. Refrigerate for at least four hours before serving.

Notes

Serve chilled, optionally topped with chopped nuts or a sprig of mint. Best consumed within 24 hours for optimal texture.
