Preparation
- In a small bowl, mix together 2 cups of crushed chocolate sandwich cookies with the melted butter.
- Portion the crumbs into 28 plastic cups using a small cookie scoop or spoon.
- Press the crumbs into the bottom of each cup using the back of another plastic cup.
Filling
- In a separate mixing bowl, blend the cream cheese and granulated sugar using an electric mixer on medium speed until smooth.
- Add the heavy cream and vanilla extract, and whip on medium-high speed until fluffy.
- Gently fold in ½ cup of crushed chocolate sandwich cookies.
Assembly
- Fill a piping bag with the cream filling mix and pipe into each cup until about ¾ full.
- Top each dessert cup with a mini chocolate sandwich cookie or additional cookie crumbs.
- Seal the cups with lids and chill in the refrigerator.
Notes
These dessert cups can be enjoyed immediately or stored in the refrigerator for 2-3 days. For variation, try using different flavor sandwich cookies or topping with melted chocolate.
