  • 1 large egg
  • 1 teaspoon vanilla extract
Coloring and Decoration

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking powder, and salt.
  3. In another bowl, cream together the softened butter and granulated sugar until light and airy.
  4. Beat in the egg and vanilla extract until well blended.
  5. Gradually mix in the flour mixture until a soft dough forms.
  6. Divide the dough into two parts; adding food coloring to one part if desired.
  7. Roll out the dough into two rectangular shapes, stack them, and roll into a log.
  8. Chill the log in the fridge for about 30 minutes to firm up.
Baking
  1. Slice the chilled log into rounds and place them on a baking sheet lined with parchment paper.
  2. Sprinkle colorful sprinkles on top if desired.
  3. Bake for 10-12 minutes or until the edges are lightly golden.
  4. Let the cookies cool on a wire rack before serving.

Notes

Store cooled cookies in an airtight container at room temperature for up to a week. Layer with parchment paper to prevent sticking.
