Preparation
- Preheat your oven to 350°F (175°C).
- In a bowl, whisk together the flour, baking powder, and salt.
- In another bowl, cream together the softened butter and granulated sugar until light and airy.
- Beat in the egg and vanilla extract until well blended.
- Gradually mix in the flour mixture until a soft dough forms.
- Divide the dough into two parts; adding food coloring to one part if desired.
- Roll out the dough into two rectangular shapes, stack them, and roll into a log.
- Chill the log in the fridge for about 30 minutes to firm up.
Baking
- Slice the chilled log into rounds and place them on a baking sheet lined with parchment paper.
- Sprinkle colorful sprinkles on top if desired.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Let the cookies cool on a wire rack before serving.
Notes
Store cooled cookies in an airtight container at room temperature for up to a week. Layer with parchment paper to prevent sticking.
