Preparation
- Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper.
- In a large bowl, whisk together the flour, baking soda, and cream of tartar. Set aside.
- In a stand mixer, combine the butter, vegetable oil, granulated sugar, and confectioners' sugar. Mix until light and fluffy.
- Add the eggs one at a time, mixing just until combined. Then add the vanilla and finely ground coffee beans, mixing until smooth.
- Gradually add the flour mixture in three additions, scraping down the sides of the bowl as needed.
- Scoop mounds of dough onto the prepared baking sheets, spacing them at least 1 inch apart.
Baking
- Bake for 8-10 minutes or until the edges are golden brown.
Glazing
- For the glaze, whisk together the confectioners' sugar and freshly brewed coffee until smooth.
- Drizzle the glaze over the cooled cookies before serving.
Notes
Store cookies in an airtight container at room temperature for up to a week. You can also refrigerate to extend freshness.
