Ingredients

  • 4.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
Wet Ingredients
  • 1 cup unsalted butter, room temperature
  • 1 cup vegetable oil
  • 1 cup granulated sugar
  • 1 cup confectioners' sugar (for cookies)
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 0.25 cup freshly ground coffee beans, finely ground
Glaze Ingredients
  • 1 cup confectioners' sugar (for glaze)
  • 2 tablespoons freshly brewed coffee

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper.
  2. In a large bowl, whisk together the flour, baking soda, and cream of tartar. Set aside.
  3. In a stand mixer, combine the butter, vegetable oil, granulated sugar, and confectioners' sugar. Mix until light and fluffy.
  4. Add the eggs one at a time, mixing just until combined. Then add the vanilla and finely ground coffee beans, mixing until smooth.
  5. Gradually add the flour mixture in three additions, scraping down the sides of the bowl as needed.
  6. Scoop mounds of dough onto the prepared baking sheets, spacing them at least 1 inch apart.
Baking
  1. Bake for 8-10 minutes or until the edges are golden brown.
Glazing
  1. For the glaze, whisk together the confectioners' sugar and freshly brewed coffee until smooth.
  2. Drizzle the glaze over the cooled cookies before serving.

Notes

Store cookies in an airtight container at room temperature for up to a week. You can also refrigerate to extend freshness.
