Ingredients
  

Mousse Mixture
  • 1 cup Coconut Milk
  • 8 ounces White Chocolate (Chopped)
  • 3 Large Eggs (Separated)
  • 1/4 cup Granulated Sugar
  • 1/2 teaspoon Vanilla Extract
  • 1/4 teaspoon Salt
  • 1 cup Shredded Coconut
Optional Base
  • 1 layer Pre-Baked Cake Optional layer for added texture.

Method
 

Preparation
  1. Pour the coconut milk into a saucepan and place it over medium heat. Bring to the verge of boiling, then remove from heat.
  2. Stir the chopped white chocolate into the hot coconut milk until melted and smooth.
  3. In a large bowl, beat together the egg yolks and sugar until pale and thickened.
  4. Pour the white chocolate mixture into the egg yolks while whisking constantly, then add the vanilla extract and mix until combined.
Whipping
  1. In a separate chilled bowl, whip the heavy cream until it forms soft peaks.
  2. Gently fold the whipped cream into the chocolate mixture until just combined.
  3. In another bowl, whisk the egg whites with salt until stiff peaks form.
  4. Fold the whipped egg whites into the chocolate mixture, then add the shredded coconut and fold gently.
Chilling
  1. Pour the mousse over the pre-baked cake or divide into individual servings.
  2. Chill in the refrigerator for at least 4 hours.

Notes

Use high-quality chocolate for a more luscious mousse. Whipping cream and egg whites separately enhances the texture. The mousse can be chilled overnight for better flavor.
