Preparation
- Pour the coconut milk into a saucepan and place it over medium heat. Bring to the verge of boiling, then remove from heat.
- Stir the chopped white chocolate into the hot coconut milk until melted and smooth.
- In a large bowl, beat together the egg yolks and sugar until pale and thickened.
- Pour the white chocolate mixture into the egg yolks while whisking constantly, then add the vanilla extract and mix until combined.
Whipping
- In a separate chilled bowl, whip the heavy cream until it forms soft peaks.
- Gently fold the whipped cream into the chocolate mixture until just combined.
- In another bowl, whisk the egg whites with salt until stiff peaks form.
- Fold the whipped egg whites into the chocolate mixture, then add the shredded coconut and fold gently.
Chilling
- Pour the mousse over the pre-baked cake or divide into individual servings.
- Chill in the refrigerator for at least 4 hours.
Notes
Use high-quality chocolate for a more luscious mousse. Whipping cream and egg whites separately enhances the texture. The mousse can be chilled overnight for better flavor.
