Ingredients
  

For the Filling
  • 6 oz cream cheese (softened) Let come to room temperature for easy spreading.
  • 2 tbsp cream of coconut Additional for filling.
  • 2 tsp sugar (optional) Adjust based on sweetness preference.
For the Toast
  • 8 oz French baguette (sliced into 1.5 inch thick slices) Slightly stale baguette works best.
  • 2 cups sweetened coconut flakes Pressed firmly onto the bread.
  • 4 large eggs For the egg mixture.
  • 2 tbsp cream of coconut For the egg mixture.
  • 1 tbsp heavy whipping cream Optional for richness.
  • 2 tsp white granulated sugar (optional) For the egg mixture.
  • 1 tsp vanilla extract For flavor enhancement.
  • 1-2 tbsp neutral oil for cooking Add oil to the pan.

Method
 

Preparation
  1. In a small bowl, mix the filling ingredients (cream cheese, cream of coconut, sugar) very well.
  2. In a shallow, wide bowl, whisk together the eggs, cream of coconut, heavy whipping cream, and sugar until well combined.
  3. Place the coconut flakes in another shallow, wide bowl.
  4. Slice the French baguette into 8 slices that are about 1.5 inches thick and slice in the middle of each baguette slice but not all the way through.
Cooking
  1. Spread about 1–1.5 tablespoons of cream cheese mixture in the middle of each bread slice.
  2. Dip each stuffed slice of bread into the egg mixture, letting it soak up the egg on both sides for a few seconds.
  3. Dip the soaked bread slice into the bowl with coconut flakes, pressing each side into the flakes. Pat gently to ensure it adheres well.
  4. Preheat a cooking pan over medium to medium-low heat and add a little oil.
  5. Cook the stuffed French toast for about 3–4 minutes on each side, covering the pan to ensure thorough cooking without excessive browning.

Notes

Serve warm with powdered sugar or a drizzle of maple syrup. Pairing with fresh berries often enhances the flavor.
