Ingredients
  

For the snowballs
  • 1.5 cups sweetened shredded coconut
  • 1 cup powdered sugar
  • 0.5 cups unsalted butter, softened
  • 0.5 cups sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon almond extract (optional) Adds a nice touch
  • 16 whole maraschino cherries, well-drained and dried Make sure they are completely dry
  • 1-1.5 cups sweetened shredded coconut for rolling

Method
 

Preparation
  1. Beat the softened butter and powdered sugar together in a mixing bowl until creamy and smooth, about 2 minutes.
  2. Add the sweetened condensed milk, vanilla extract, and almond extract (if using). Mix until fully combined, about 1 minute.
  3. Stir in 1.5 cups of shredded coconut until a soft, rollable dough forms. Add more coconut if the mixture feels too sticky.
  4. Refrigerate the dough for about 30 minutes to firm it up.
Forming the Snowballs
  1. While the dough chills, dry the maraschino cherries thoroughly.
  2. Roll out portions of dough, about 1-1.5 tablespoons each, into smooth balls.
  3. Press a cherry into the center of each ball.
  4. Roll each ball in additional shredded coconut to coat the sides and bottom.
Chilling
  1. Refrigerate the finished snowballs for at least 1 hour until firm.

Notes

Ensure cherries are completely dry to prevent soggy snowballs. Chilling the dough is important for easier rolling and shape retention. Adjust coconut amount for desired consistency. Almond extract is optional but enhances flavor.
