  • 2 tablespoons fresh lime or key lime juice
  • 1/2 cup vanilla or coconut Greek yogurt
  • 1/2 cup light coconut milk
  • 1/2 cup fresh spinach For added nutrients without altering flavor.
  • 1/2 teaspoon vanilla extract
  • 1-2 teaspoons maple syrup or honey Optional, to taste.
For Serving
  • 1 slice extra lime wedge For rimming the glass.

Method
 

Preparation
  1. Prepare your glass by wetting the rim with a lime wedge and dipping it into crushed graham cracker crumbs.
Blending
  1. Add the frozen banana, lime zest, lime juice, yogurt, coconut milk, spinach, and vanilla extract to a blender.
  2. Blend until smooth and creamy. Add more coconut milk if the mixture is too thick.
  3. Taste and add maple syrup or honey if desired, then blend again to combine.
Serving
  1. Pour the smoothie into your prepared glass.
  2. Top with whipped cream and shredded toasted coconut.

Notes

For a creamier texture, consider using full-fat coconut milk or yogurt. Fresh mint can add an interesting flavor. Toast coconut lightly before serving for extra crunch. Smoothie is best served chilled.
