  • 1 cup rolled oats Regular or quick oats can be used.
  • 1 cup coconut milk Canned or carton variety both work.
  • 1/2 cup Greek yogurt Use plain or vanilla-flavored yogurt.
  • 1/4 cup shredded unsweetened coconut Adds texture and flavor.
  • 2 tablespoons maple syrup or honey Choose based on preference.
  • 1 teaspoon vanilla extract Enhances flavor.
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt Balances the sweetness.
  • 1/2 cup sliced bananas Optional, adds sweetness and creaminess.
For Serving
  • to taste fresh whipped cream Optional topping.
  • to taste additional shredded coconut Optional garnish.

Method
 

Preparation
  1. In a medium bowl, combine rolled oats and coconut milk.
  2. Blend in Greek yogurt and shredded coconut.
  3. Drizzle in maple syrup or honey, and add vanilla extract, ground cinnamon, and salt.
  4. If desired, fold in sliced bananas.
  5. Divide the mixture into two jars or containers.
  6. Seal the jars and refrigerate overnight or for at least 4 hours.
Serving
  1. Upon serving, stir the oats gently and top with fresh whipped cream and additional shredded coconut, if desired.

Notes

For best results, soak the oats longer for creaminess. Adjust sweetness based on your taste. Consider adding nuts or dark chocolate for added flavor.
