- In a medium bowl, combine rolled oats and coconut milk.
- Blend in Greek yogurt and shredded coconut.
- Drizzle in maple syrup or honey, and add vanilla extract, ground cinnamon, and salt.
- If desired, fold in sliced bananas.
- Divide the mixture into two jars or containers.
- Seal the jars and refrigerate overnight or for at least 4 hours.
Serving
- Upon serving, stir the oats gently and top with fresh whipped cream and additional shredded coconut, if desired.
Notes
For best results, soak the oats longer for creaminess. Adjust sweetness based on your taste. Consider adding nuts or dark chocolate for added flavor.
