Ingredients
  

Base Ingredients
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
Coconut Layer Ingredients
  • 1 cup shredded coconut
  • 1 cup sweetened condensed milk
Chocolate Topping Ingredients
  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon coconut oil For melting with chocolate chips

Method
 

Preparation
  1. Preheat your oven to 350 degrees F (175 degrees C) and line an 8x8 inch baking pan with parchment paper.
  2. In a mixing bowl, combine the flour, melted butter, and granulated sugar, stirring until you have a crumbly mixture.
  3. Press this mixture evenly into the bottom of the prepared baking pan, creating a firm base.
  4. Bake for 10-12 minutes, or until lightly golden.
Coconut Layer
  1. In another bowl, mix the shredded coconut and sweetened condensed milk until well combined.
  2. Once the base is out of the oven, spread the coconut mixture evenly over it.
  3. Return to the oven and bake for another 15-18 minutes, or until the coconut layer is set and slightly golden at the edges.
  4. Remove from the oven and let it cool completely.
Chocolate Topping
  1. In a microwave-safe bowl, combine the chocolate chips and coconut oil.
  2. Microwave in 30-second intervals, stirring in between, until smooth and melted.
  3. Pour the melted chocolate over the cooled coconut layer, spreading it evenly.
  4. Refrigerate for at least an hour until the chocolate is firm.
  5. Once set, cut into bars and enjoy your homemade coconut cookie bars.

Notes

Add a sprinkle of sea salt on top of the chocolate layer before it sets for an extra flavor twist. Store in an airtight container in the refrigerator for freshness, lasting up to a week.
