  • 14 ounces sweetened shredded coconut
  • 14 ounces sweetened condensed milk Use full-fat for best results.
  • 1 cup powdered sugar Add more if the mixture feels too wet.
  • 1 teaspoon vanilla extract
  • 3 cups dark chocolate melts Can be substituted with white chocolate for variation.

Method
 

Preparation
  1. Place coconut, sweetened condensed milk, powdered sugar, and vanilla extract in a medium mixing bowl.
  2. Use a hand mixer to beat together until fully combined.
  3. Place the bowl in the freezer for 10 minutes to allow the mixture to firm up.
  4. After chilling, use a cookie scoop to scoop balls of the coconut mixture onto a parchment-lined baking sheet.
  5. Freeze for 60 minutes to harden.
Chocolate Dipping
  1. Melt dark chocolate in a microwave-safe bowl in 30-second increments, stirring until smooth.
  2. Dip each coconut ball in the melted chocolate using a fork, then place on wax or parchment paper to set.

Notes

Serve chilled or at room temperature. Store in an airtight container in the refrigerator for up to two weeks or freeze for up to three months.
