Ingredients

Fruits and Juices
  • 20 ounces crushed pineapple, drained
  • 15 ounces pitted dark sweet cherries in heavy syrup, drained
Gelatin and Soda Mixture
  • 6 ounces cherry flavored gelatin (two 3-ounce packages)
  • 8 ounces Coca Cola
Toppings and Nuts
  • 1 cup chopped walnuts
  • 8 ounces thawed whipped topping
  • 4 ounces cream cheese, softened
  • Maraschino cherries, drained and patted dry For garnish

Method

Preparation
  1. Measure out one cup each of the reserved pineapple and cherry juices; add water until you have a total of two cups.
  2. In a small saucepan, heat the juices over medium-high heat until they come to a low boil. Remove from heat and transfer to a heat-safe bowl.
  3. Stir in the cherry gelatin until dissolved, then mix in the Coca Cola. Allow to cool for a few minutes, then refrigerate for 30 minutes.
Combination
  1. Once chilled, gently fold in the crushed pineapple, dark sweet cherries, and chopped walnuts.
  2. Spoon the mixture into a serving bowl and refrigerate for at least four hours to set.
Topping
  1. Beat the cream cheese until smooth, then add the whipped topping and blend until creamy.
  2. Spoon the topping over the set gelatin and garnish with Maraschino cherries.

Notes

Store the trifle covered in the refrigerator for up to three days. Consider toasting walnuts for added flavor and experimenting with flavored sodas for variations.
