Ingredients
  

For the pudding
  • 200 g Dates (pitted)
  • 1 teaspoon Baking soda
  • 1 cup Water (boiling)
  • 7 tablespoons Butter (softened)
  • 3/4 cup Brown sugar (light or dark)
  • 2 large Eggs
  • 1 1/3 cups Flour
  • 1 teaspoon Baking powder
  • 1/4 teaspoon Salt
For the toffee sauce
  • 5 tablespoons Butter
  • 3/4 cup Brown sugar
  • 1 cup Cream
  • 1 teaspoon Vanilla extract

Method
 

Preparation
  1. Preheat your oven to 180°C (350°F) and grease an 8-inch baking dish.
  2. Chop pitted dates into small pieces and toss with baking soda in a bowl. Pour boiling water over the dates and let sit for about 10 minutes.
Mixing the Batter
  1. In a mixing bowl, beat softened butter and brown sugar together until fluffy, about 2 minutes.
  2. Add eggs and vanilla extract, and beat until combined.
  3. Sift flour, baking powder, and salt into the butter mixture and gently fold in.
  4. Stir in soaked dates and a splash of their soaking liquid.
Baking
  1. Pour the batter into the greased baking dish and bake for 25-30 minutes or until a toothpick comes out clean.
Making the Toffee Sauce
  1. In a saucepan, combine butter, brown sugar, and cream over medium heat. Stir until melted and reduce for 2-3 minutes.
  2. Add a splash of vanilla extract to the sauce.
Serving
  1. Once the pudding is baked, pierce it all over and pour half of the warm toffee sauce on top.
  2. Serve warm with extra toffee sauce and a scoop of vanilla ice cream or whipped cream.

Notes

For a nutty twist, add chopped walnuts or pecans. If using figs or prunes instead of dates, adjust soaking time accordingly.
