Preparation
- Line an 8×8 square baking pan with foil, extending the edges over the sides of the pan.
- Lightly spray the foil with cooking spray.
Making the crust
- Crush one package of Circus Animal Cookies in a food processor until coarsely crushed.
- Mix in melted butter until well combined.
- Spread the mixture evenly into the baking pan and press down to form a crust.
Making the filling
- In another bowl, whisk together the pudding mix with the milk until smooth.
- Add pink food coloring as desired.
- Fold in half of the whipped topping until combined.
- Pour the pudding mixture onto the cookie crust and smooth it out.
- Frost the pudding layer with the remaining whipped topping.
Finishing touches
- Crush remaining Circus Animal Cookies and sprinkle them on top.
- Garnish with rainbow jimmie sprinkles.
- Cover and chill in the refrigerator for at least 8 hours, preferably overnight.
Serving
- Lift the dessert out of the pan using the foil and cut into squares.
Notes
Keep whipped topping fully thawed for a light texture. Adjust pink food coloring to preference. Consider adding fresh fruit for variety.
