Ingredients
  

For the crust
  • 2 bags Circus Animal Cookies 11 oz each, divided
  • 1/4 cup melted butter
For the filling
  • 1 box instant vanilla pudding mix 3.4 oz, just the dry mix
  • 1 cup milk
  • 1 tub whipped topping 16 oz, thawed
  • 1/4 cup rainbow jimmie sprinkles
  • 1 drop pink food coloring optional

Method
 

Preparation
  1. Line an 8×8 square baking pan with foil, extending the edges over the sides of the pan.
  2. Lightly spray the foil with cooking spray.
Making the crust
  1. Crush one package of Circus Animal Cookies in a food processor until coarsely crushed.
  2. Mix in melted butter until well combined.
  3. Spread the mixture evenly into the baking pan and press down to form a crust.
Making the filling
  1. In another bowl, whisk together the pudding mix with the milk until smooth.
  2. Add pink food coloring as desired.
  3. Fold in half of the whipped topping until combined.
  4. Pour the pudding mixture onto the cookie crust and smooth it out.
  5. Frost the pudding layer with the remaining whipped topping.
Finishing touches
  1. Crush remaining Circus Animal Cookies and sprinkle them on top.
  2. Garnish with rainbow jimmie sprinkles.
  3. Cover and chill in the refrigerator for at least 8 hours, preferably overnight.
Serving
  1. Lift the dessert out of the pan using the foil and cut into squares.

Notes

Keep whipped topping fully thawed for a light texture. Adjust pink food coloring to preference. Consider adding fresh fruit for variety.
