Ingredients
  

For the crust
  • 1 cup graham cracker crumbs Crushed graham crackers for a buttery base.

For the filling
  • 16 oz cream cheese, softened Ensure it is at room temperature.
  • 1/2 cup granulated sugar For sweetness in the filling.
  • 2 large eggs, room temperature Add one at a time for better mixing.
  • 1/4 cup sour cream Adds creaminess to the filling.
  • 1 tsp pure vanilla extract For flavor enhancement.
  • 3 tbsp brown sugar, packed For the cinnamon swirl.
  • 1 1/2 tsp ground cinnamon For the cinnamon swirl.

Method
 

Preparation
  1. Preheat your oven to 325°F (163°C) and line a 12-cup muffin pan with paper liners.
  2. In a bowl, combine graham cracker crumbs, sugar, and melted butter until the mixture resembles moist sand.
  3. Press this mixture into the muffin cups to form a firm base and allow it to bake for about 5 minutes.
Filling
  1. Beat softened cream cheese until smooth and creamy.
  2. Gradually blend in the sugar until well incorporated.
  3. Introduce the eggs one at a time, mixing gently to maintain a light texture.
  4. Fold in sour cream and vanilla extract to create a silky batter.
  5. In a small bowl, combine brown sugar and cinnamon for the swirl.
  6. Spoon the cheesecake filling into prepared crusts, followed by a sprinkle of the cinnamon mixture and swirl gently with a toothpick.
Baking
  1. Bake for 18 to 22 minutes until cheesecakes are set with a slight jiggle in the centers.
  2. Allow to cool in the oven for 15 minutes before transferring to the refrigerator.
  3. Chill for at least 3 hours before serving.

Notes

Store in an airtight container in the refrigerator for up to five days. Wrap individually for freezing. Consider adding a touch of nutmeg for extra warmth and flavor enhancements.
