Ingredients
  

For the Icing
  • 3 tablespoons powdered sugar
  • 3/4 teaspoon water or dairy-free milk
For the Cinnamon Roll
  • 9 tablespoons all-purpose flour
  • 3/4 teaspoon baking powder
  • a small pinch fine sea salt
  • 4 tablespoons water approximately
  • 3/4 teaspoon ground cinnamon
  • 1 1/2 tablespoons brown sugar or coconut sugar
  • a tiny dab oil for greasing the mug

Method
 

Preparation
  1. Whisk together the powdered sugar with your choice of water or dairy-free milk to create the icing. Set aside.
  2. Grease your favorite mug with a tiny dab of oil.
  3. In another bowl, combine the flour, baking powder, and sprinkle of salt.
  4. Stir in enough water to form a slightly tacky dough. Knead it softly and shape it into a ball.
  5. Roll the dough into a strip about 4 inches wide.
  6. Sprinkle the ground cinnamon and sugar over the dough, then fold in the sides and roll it up tightly.
  7. Place the roll in the greased mug, pour about 1/2 teaspoon of water over the top.
Cooking
  1. Microwave uncovered for about 50 seconds to 1 minute, watching closely.
  2. Check doneness with a toothpick — it should come out clean.
  3. Once ready, spoon the icing over the roll.

Notes

Serve warm, preferably with tea or coffee. If you have leftovers, cover with plastic wrap and refrigerate. Reheat in the microwave for 15-20 seconds.
