Ingredients
  

Main Ingredients
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • ½ cup unsalted butter, softened Ensure butter is softened for easier mixing.
  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • 1 large egg
  • 2 tsps vanilla extract
Filling
  • ½ cup brown sugar, packed
  • 2 tsps ground cinnamon

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking powder, salt, and cinnamon.
  3. In another bowl, cream softened butter with granulated and brown sugars until fluffy.
  4. Beat in the egg and vanilla extract until smooth.
  5. Gradually mix dry ingredients into the wet mixture until just combined.
Filling and Rolling
  1. Prepare the filling by combining brown sugar and cinnamon in a small bowl.
  2. Spread half of the dough on parchment paper, sprinkle with filling, and roll it up tightly.
  3. Slice into rounds and place on a baking sheet lined with parchment paper.
Baking
  1. Bake for 10-12 minutes or until golden brown.

Notes

Serve fresh out of the oven or allow them to cool on a wire rack. They are delicious on their own but can be enhanced with a drizzle of icing.
