Preparation
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine the dried fruit, diced apple, citrus zest, and juice. Add in the brown sugar, brandy, cinnamon, and nutmeg. Allow to soak for several hours or overnight.
- Dust your countertop with flour, and roll out the pie crust until it is thin.
- Cut the rolled crust into circles suitable for your muffin tin.
Assembly and Baking
- Gently place the crust circles into the muffin tin.
- Fill each crust with the soaked fruit mixture.
- Cover with additional pie crust, crimping the edges to seal.
- Bake for 20-25 minutes, until the tops are golden brown.
- Allow to cool slightly before serving.
Notes
Serve warm, dusted with powdered sugar or with whipped cream. Store leftovers in an airtight container for up to three days at room temperature, or freeze for up to a month.
