  • 1 cup dried fruit (e.g., raisins, currants, sultanas) A mix of your favorite dried fruits
  • 1 apple, diced Any variety of apple can work
  • 1 orange, zest and juice Freshly grated for best flavor
  • 1 lemon, zest and juice Freshly grated for best flavor
  • 1/2 cup brown sugar Packed firmly
  • 1/2 cup brandy Can be substituted with apple cider or orange juice
  • 1 teaspoon ground cinnamon
  • 1 teaspoon nutmeg
Crust Ingredients
  • 1 pound pie crust (homemade or store-bought) Ensure it's rolled out to thinness
  • As needed tablespoons flour for dusting For rolling out the crust

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the dried fruit, diced apple, citrus zest, and juice. Add in the brown sugar, brandy, cinnamon, and nutmeg. Allow to soak for several hours or overnight.
  3. Dust your countertop with flour, and roll out the pie crust until it is thin.
  4. Cut the rolled crust into circles suitable for your muffin tin.
Assembly and Baking
  1. Gently place the crust circles into the muffin tin.
  2. Fill each crust with the soaked fruit mixture.
  3. Cover with additional pie crust, crimping the edges to seal.
  4. Bake for 20-25 minutes, until the tops are golden brown.
  5. Allow to cool slightly before serving.

Notes

Serve warm, dusted with powdered sugar or with whipped cream. Store leftovers in an airtight container for up to three days at room temperature, or freeze for up to a month.
