Ingredients
  

First Layer
  • 6 ounces lime Jell-O
  • 2.25 cups hot water (not boiling)
Second Layer
  • 8 ounces cream cheese (room temperature)
  • 2.5 cups mini marshmallows
  • 0.5 cup pineapple juice
  • 3 ounces lemon Jell-O
  • 1.5 cups hot water (not boiling)
Third Layer
  • 6 ounces cherry Jell-O
  • 2 cups hot water (not boiling)

Method
 

First Layer
  1. Pour the lime Jell-O powder into a mixing bowl with hot water, stirring until it dissolves. Pour into a 9x13 baking dish and refrigerate for approximately one hour to set.
Second Layer
  1. Blend the cream cheese in a stand mixer until fluffy.
  2. Melt the mini marshmallows with pineapple juice in a saucepan over medium-high heat.
  3. Once melted, allow the mixture to cool slightly.
  4. Dissolve the lemon Jell-O in hot water and combine with the cooled marshmallow mixture and cream cheese. Set aside to cool for 30 to 40 minutes.
  5. Pour this layer over the lime layer and return to the refrigerator until set.
Third Layer
  1. Dissolve the cherry Jell-O in hot water and allow it to cool to room temperature.
  2. Gently pour this layer over the lemon and cream cheese mixture, then return to the refrigerator to set fully, preferably overnight.

Notes

Store any leftovers in the refrigerator, tightly covered. It will keep for a day or two. Stir gently between layers to maintain the beautiful presentation.
