Preparation
- Gather all ingredients, and lay out parchment paper on a flat surface.
- In a medium bowl, combine Lime Jello with 3/4 cup Greek yogurt and 2 1/2 cups desiccated coconut; stir until well blended.
- In another bowl, combine Strawberry Jello with remaining yogurt and coconut, mixing thoroughly.
- Wearing kitchen gloves, roll tablespoon-sized portions of the red mixture into balls, coating each with desiccated coconut, and place on parchment.
- Repeat with the green mixture.
Chilling
- Allow the Jello balls to chill in the refrigerator for four hours until set.
Notes
These Jello Balls are best enjoyed fresh, though they can be stored in an airtight container in the refrigerator for up to a week.
