  • 1 teaspoon vanilla extract
  • 1 box (15.25 ounces) yellow cake mix
  • 1/2 cup holiday sprinkles
  • 1/2 cup powdered sugar for coating

Preparation
  1. Preheat the oven to 350 degrees F and line two baking sheets with parchment paper.
  2. In a large bowl, beat the softened cream cheese and butter together with an electric mixer until smooth.
  3. Add the egg and vanilla extract, and whisk until the mixture is velvety smooth.
  4. Gently fold in the yellow cake mix until a thick dough forms.
  5. Carefully mix in the holiday sprinkles, being cautious not to overmix.
  6. Chill the dough for at least 30 minutes to make it easier to handle.
Baking
  1. Scoop out portions of dough about 1 1/2 inches in diameter and roll them in powdered sugar to coat.
  2. Place the coated dough balls on the prepared baking sheets, leaving about 2 inches between each.
  3. Bake for 10-12 minutes until the edges are set but the centers remain soft.
  4. Let the cookies cool on the baking sheet for a few moments before transferring to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to one week or freeze for up to three months. Consider adding a pinch of salt for a deeper flavor.
