Preparation
- Preheat the oven to 350 degrees F and line two baking sheets with parchment paper.
- In a large bowl, beat the softened cream cheese and butter together with an electric mixer until smooth.
- Add the egg and vanilla extract, and whisk until the mixture is velvety smooth.
- Gently fold in the yellow cake mix until a thick dough forms.
- Carefully mix in the holiday sprinkles, being cautious not to overmix.
- Chill the dough for at least 30 minutes to make it easier to handle.
Baking
- Scoop out portions of dough about 1 1/2 inches in diameter and roll them in powdered sugar to coat.
- Place the coated dough balls on the prepared baking sheets, leaving about 2 inches between each.
- Bake for 10-12 minutes until the edges are set but the centers remain soft.
- Let the cookies cool on the baking sheet for a few moments before transferring to a wire rack to cool completely.
