For the Pie
  • 1 pie crust 1 pie crust (buttery, flaky)
  • 1 cup 1 cup heavy cream For a lighter filling, whip the cream before adding.
  • 1 cup 1 cup molasses
  • 1 teaspoon 1 teaspoon ground cinnamon
  • 1/2 teaspoon 1/2 teaspoon ground nutmeg
  • 2 tablespoons 2 tablespoons sugar
  • 2 tablespoons 2 tablespoons cornstarch
  • 1/2 teaspoon 1/2 teaspoon vanilla extract
  • to taste Cookie crumbs for garnish Optional for serving.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Prepare the pie crust in a pie dish.
  3. In a saucepan, combine molasses, cinnamon, nutmeg, sugar, and cornstarch. Stir over medium heat until the mixture thickens.
  4. Remove from heat and fold in the vanilla extract.
  5. Pour the gingerbread cream into the prepared pie crust.
Baking
  1. Bake in the preheated oven for 30-35 minutes or until set.
  2. Allow the pie to cool, then refrigerate to chill.
Serving
  1. Serve chilled with whipped cream and cookie crumbs on top.

Notes

Store leftover pie in the refrigerator for up to three days. For variations, try adding chocolate ganache or using a gluten-free pie crust.
