Preparation
- Preheat your oven to 350°F (175°C).
- Prepare the pie crust in a pie dish.
- In a saucepan, combine molasses, cinnamon, nutmeg, sugar, and cornstarch. Stir over medium heat until the mixture thickens.
- Remove from heat and fold in the vanilla extract.
- Pour the gingerbread cream into the prepared pie crust.
Baking
- Bake in the preheated oven for 30-35 minutes or until set.
- Allow the pie to cool, then refrigerate to chill.
Serving
- Serve chilled with whipped cream and cookie crumbs on top.
Notes
Store leftover pie in the refrigerator for up to three days. For variations, try adding chocolate ganache or using a gluten-free pie crust.
