Ingredients
  

Mousse Base
  • 2 cups fresh strawberries, pureed Puree fresh strawberries for the mousse.
  • 1/2 cup granulated sugar Adjust based on sweetness preference.
  • 2 cups heavy whipping cream, chilled Ensure the cream is extremely cold for whipping.
  • 2 tablespoons unflavored gelatin Essential for setting the mousse.
  • 1/4 cup cold water For blooming the gelatin.
Chocolate Glaze
  • 8 oz white chocolate, finely chopped Use high-quality chocolate for best results.
  • 1/2 cup heavy cream Used to create the chocolate glaze.
  • 2 tablespoons unsalted butter Adds richness to the glaze.
Crust
  • 1 cup chocolate cookie crumbs Use for the base of the mousse domes.
  • 2 tablespoons melted butter To bind the cookie crumbs.

Method
 

Preparation
  1. Mix cookie crumbs with melted butter and press them into dome molds; chill in the refrigerator.
  2. Bloom the gelatin in cold water for 5 minutes.
  3. Heat half the strawberry puree until warm, dissolve the gelatin in it, then mix with the remaining puree.
  4. Whip the chilled cream to stiff peaks and gently fold it into the strawberry mixture.
Assembly and Freezing
  1. Fill the molds with the mousse mixture and freeze until solid.
Making the Glaze
  1. Heat the heavy cream and pour it over the chopped white chocolate; add the butter and stir until glossy.
  2. Unmold the frozen domes and glaze them with the cooled chocolate mixture.
  3. Chill briefly, then decorate as desired before serving.

Notes

For best results, ensure the heavy cream is very cold before whipping. Allow the gelatin to fully bloom to avoid lumpy mousse. When glazing, allow the chocolate mixture to cool slightly to prevent melting the mousse.
