Preparation
- Mix cookie crumbs with melted butter and press them into dome molds; chill in the refrigerator.
- Bloom the gelatin in cold water for 5 minutes.
- Heat half the strawberry puree until warm, dissolve the gelatin in it, then mix with the remaining puree.
- Whip the chilled cream to stiff peaks and gently fold it into the strawberry mixture.
Assembly and Freezing
- Fill the molds with the mousse mixture and freeze until solid.
Making the Glaze
- Heat the heavy cream and pour it over the chopped white chocolate; add the butter and stir until glossy.
- Unmold the frozen domes and glaze them with the cooled chocolate mixture.
- Chill briefly, then decorate as desired before serving.
Notes
For best results, ensure the heavy cream is very cold before whipping. Allow the gelatin to fully bloom to avoid lumpy mousse. When glazing, allow the chocolate mixture to cool slightly to prevent melting the mousse.
