- Bake for 8 minutes and allow it to cool slightly.
Cheesecake Filling
- In another bowl, beat the cream cheese and sugar together until smooth.
- Add the eggs one at a time, ensuring they are well incorporated, and mix in the vanilla extract.
- Pour the creamy cheesecake filling over your cooled crust.
- Spoon the raspberry jam over the top and gently swirl with a knife to create pretty patterns.
- Scatter fresh raspberries throughout this luscious mixture.
Baking
- Bake in the preheated oven for 32–38 minutes, or until the center is just slightly jiggly.
- Let the bars cool at room temperature, then refrigerate for at least 4 hours or overnight for the best flavor.
Finishing Touches
- Melt the chocolate chips and drizzle over the chilled bars, and top with extra fresh raspberries for a beautiful finish.
Notes
Store leftovers in an airtight container in the refrigerator for up to a week. If freezing, wrap bars individually in plastic wrap and place in the freezer. Thaw overnight in the fridge before serving.
