Ingredients
  

Crust
  • 2 cups chocolate cookie crumbs
  • 6 tbsp unsalted butter, melted
Cheesecake Filling
  • 16 oz cream cheese, softened
  • 3/4 cup sugar
  • 2 large eggs Add one at a time.
  • 1 tsp vanilla extract
  • 1/3 cup raspberry jam Adjust to taste.
  • 1 cup fresh raspberries
  • 1/2 cup semi-sweet chocolate chips
  • Extra raspberries for garnish

Method
 

Preparation
  1. Preheat your oven to 325°F (163°C).
  2. In a mixing bowl, combine the chocolate cookie crumbs with the melted butter. Press this mixture firmly into an 8×8-inch baking pan lined with parchment paper.
  3. Bake for 8 minutes and allow it to cool slightly.
Cheesecake Filling
  1. In another bowl, beat the cream cheese and sugar together until smooth.
  2. Add the eggs one at a time, ensuring they are well incorporated, and mix in the vanilla extract.
  3. Pour the creamy cheesecake filling over your cooled crust.
  4. Spoon the raspberry jam over the top and gently swirl with a knife to create pretty patterns.
  5. Scatter fresh raspberries throughout this luscious mixture.
Baking
  1. Bake in the preheated oven for 32–38 minutes, or until the center is just slightly jiggly.
  2. Let the bars cool at room temperature, then refrigerate for at least 4 hours or overnight for the best flavor.
Finishing Touches
  1. Melt the chocolate chips and drizzle over the chilled bars, and top with extra fresh raspberries for a beautiful finish.

Notes

Store leftovers in an airtight container in the refrigerator for up to a week. If freezing, wrap bars individually in plastic wrap and place in the freezer. Thaw overnight in the fridge before serving.
