  • 3 cups quick cook oats Use quick cook oats for the best texture.
  • 1/4 teaspoon salt
  • 1/4 cup cocoa powder Can swap for carob powder for a different taste.
Wet Ingredients
  • 1/2 cup unsalted butter Melt before mixing.
  • 1 2/3 cups sugar
  • 1/2 cup milk Use whole milk for creaminess.
  • 1 cup peanut butter Natural peanut butter can change texture.
  • 2 teaspoons vanilla extract

Method
 

Preparation
  1. In a large bowl, stir together the oats and salt. Set aside.
  2. In a small saucepan over medium-high heat, whisk together the butter, sugar, milk, and cocoa. Bring to a boil for about a minute, then remove from heat.
  3. Whisk in the peanut butter and vanilla until well combined.
  4. Pour the chocolate peanut butter mixture over the oats and stir until combined.
Baking
  1. Line a baking sheet with wax paper. Drop the cookies onto the wax paper using a medium cookie scoop.
  2. Let the cookies cool on the countertop.
  3. Once cool and dry, store in the refrigerator.

Notes
