  • ¼ cup cocoa powder Toast lightly for deeper flavor if desired.
  • ¼ teaspoon salt
  • ½ teaspoon baking soda
  • ¾ cup white sugar Additional sugar for dusting.
Wet Ingredients
  • cup butter, softened Use room temperature for best results.
  • ¼ cup peanut butter Natural peanut butter can be used but may require chilling the dough.
  • 1 piece egg Use a room-temperature egg for smooth mixing.

Method
 

Preparation
  1. Preheat oven to 350 degrees Fahrenheit.
  2. In a bowl, mix together flour, cocoa powder, baking soda, and salt. Set aside.
  3. In the bowl of your stand mixer, cream together sugar, butter, and peanut butter over medium speed until smooth.
  4. Beat in the egg until well incorporated.
  5. Add the flour mixture to the wet ingredients and beat until smooth.
Baking
  1. Drop rounded tablespoons of dough onto a parchment paper-lined baking sheet.
  2. Gently press the dough down with a fork and sprinkle the top with sugar.
  3. Bake for 10 to 11 minutes. Transfer cookies to a cooling rack to cool.

Notes

These cookies are best served warm with coffee or milk. Store in an airtight container at room temperature for up to 4 days. For longer storage, freeze for up to 2 months.
