Preparation
- Preheat oven to 350 degrees Fahrenheit.
- In a bowl, mix together flour, cocoa powder, baking soda, and salt. Set aside.
- In the bowl of your stand mixer, cream together sugar, butter, and peanut butter over medium speed until smooth.
- Beat in the egg until well incorporated.
- Add the flour mixture to the wet ingredients and beat until smooth.
Baking
- Drop rounded tablespoons of dough onto a parchment paper-lined baking sheet.
- Gently press the dough down with a fork and sprinkle the top with sugar.
- Bake for 10 to 11 minutes. Transfer cookies to a cooling rack to cool.
Notes
These cookies are best served warm with coffee or milk. Store in an airtight container at room temperature for up to 4 days. For longer storage, freeze for up to 2 months.
