Method
Melting Chocolate
- Begin by melting the chocolate in a double boiler, stirring gently until it’s smooth and glossy.
Mixing Ingredients
- In a separate bowl, beat the egg yolks and sugar together until the mixture is light and creamy.
- Once your chocolate is melted and slightly cooled, fold it into the egg mixture.
- Whip the cream until stiff peaks form, then gently fold that whipped cream into the chocolate mixture.
- Add the freshly squeezed orange juice and zest, folding them in gently.
Setting the Mousse
- Carefully pour the mixture into glasses and refrigerate for at least 2 hours to let it set.
Notes
If any mousse is left, cover with plastic wrap and store in the fridge for up to 2 days. You can also add orange liqueur or espresso for variations.
