  • 2 large Eggs Room temperature eggs blend better.
  • 1 teaspoon Vanilla extract Pure vanilla amplifies the chocolate flavor.
  • 0.5 cup All-purpose flour Gives the brownie structure without making it dry.
  • 3 tablespoons Cocoa powder Adds extra chocolate depth.
  • 0.25 teaspoon Salt Balances sweetness.
Mousse Layers
  • 8 oz Semi-sweet chocolate, chopped Main flavor component.
  • 2 cups Heavy whipping cream, divided Part for melting with chocolate, rest for whipping.
  • 0.25 cup Powdered sugar Sweetens whipped cream and stabilizes it.
  • 1 teaspoon Vanilla extract Rounds out chocolate flavor.
  • 1 teaspoon Gelatin, optional Helps mousse hold its shape.
  • 6 oz Dark chocolate, chopped Use 70% cocoa or higher for less sweetness.
  • 1 cup Heavy whipping cream Creates the fluffy texture.
  • 2 tablespoons Powdered sugar A touch due to less sweetness of dark chocolate.
Topping
  • to taste Chocolate ganache or mousse for piping Use leftover mousse or make a small batch.
  • to taste Chocolate shavings or cocoa powder For the final decorative touch.

Method
 

Prepare Your Pan
  1. Preheat your oven to 350°F (175°C), grease a square baking pan, and line it with parchment paper.
Make the Brownie Base
  1. Melt together the dark chocolate and butter in a saucepan over low heat, stirring until smooth.
  2. Remove from heat and stir in granulated sugar.
  3. Let it cool slightly before whisking in the eggs and vanilla.
  4. Sift the flour, cocoa powder, and salt together, and fold it into the chocolate mixture.
Create the First Mousse Layer
  1. Pour the brownie batter into your prepared pan and bake for 20 minutes, until a toothpick comes out clean.
  2. Allow it to cool completely.
  3. Melt the semi-sweet chocolate with 1 cup of heavy cream and powdered sugar over low heat.
  4. Allow to cool to room temperature, then fold in whipped cream to create a mousse texture.
Add the Dark Chocolate Layer
  1. Melt the dark chocolate with the remaining cream.
  2. If using, dissolve your gelatin in warm water and mix it in.
  3. Whip the remaining cream with the sugar and fold into the melted chocolate.
Pipe and Decorate
  1. Layer the light mousse over the brownie base, followed by the dark chocolate mousse.
  2. Pipe some remaining mousse or chocolate ganache as decoration, and sprinkle with chocolate shavings or cocoa powder.

Notes

Store any leftovers covered in the fridge for up to three days. This dessert loves a cool environment to keep its mousse texture intact.
