Ingredients
  

For the Cookies
  • ½ cup unsalted butter (room temperature)
  • 1 cup granulated sugar (200 grams)
  • 1 teaspoon vanilla
  • 1 large egg (room temperature)
  • cups flour (163 grams, fluffed and leveled)
  • cup unsweetened cocoa powder (30 grams)
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ¾ cup semisweet chocolate chips or chopped chocolate (130 grams)
  • 1 tablespoon oil
For the Mint Frosting
  • ½ cup unsalted butter (room temperature)
  • cups powdered icing sugar
  • 1 tablespoon milk
  • ½-1 teaspoon mint extract Depending on your tastes
  • Green food coloring (optional) For extra flair
For the Chocolate Ganache
  • ¾ cup semisweet chocolate
  • 1 tablespoon oil

Method
 

Chocolate Cookies
  1. In a mixing bowl, whip up the butter and granulated sugar till fluffy.
  2. Add in the egg and vanilla, blending until well combined.
  3. Sift together the flour, cocoa powder, baking soda, and salt, then gently fold it into the mixture.
  4. Toss in the chocolate chips and mix until evenly distributed.
  5. Roll the dough into balls and place them on a baking sheet, leaving space for expanding.
  6. Bake at 350°F (175°C) for about 10-12 minutes.
Mint Frosting
  1. Combine room-temperature butter and powdered sugar to create a fluffy mixture.
  2. Stir in the milk and mint extract, adding green food coloring if desired.
Chocolate Ganache
  1. Melt chocolate and oil in a bowl over simmering water until silky smooth.
Assembly
  1. Turn the chocolate cookies upside down and add a layer of mint frosting on top.
  2. Drizzle with chocolate ganache to finish.

Notes

For best results, use room-temperature ingredients. Feel free to experiment with flavors or add crushed mint leaves to your ganache.
