Preparation
- Preheat your oven to 175 degrees C. Grease a 23 cm springform pan and dust it lightly with flour.
- Prepare the cake mix according to package directions using the vegetable oil, eggs, and water.
- Pour the mixture into the pan and bake for about 20 to 25 minutes or until a toothpick inserted comes out clean.
- Allow the chocolate base to cool completely.
Making the cheesecake filling
- In another bowl, beat the cream cheese with sugar until smooth.
- Add eggs one by one, blending each in before the next.
- Stir in the vanilla and peppermint extract, along with the sour cream.
- Pour the filling over the cooled chocolate cake and bake at 175 degrees C for 35 to 40 minutes, until set.
Finishing touches
- Cool in the turned-off oven with the door slightly ajar for about an hour.
- Chill the cheesecake for at least 3 hours or overnight.
- Melt the heavy cream and dark chocolate chips in the microwave, stirring every 30 seconds until glossy.
- Stir in the vanilla and pour the chocolate over the chilled cake.
- Refrigerate for another 30 minutes, then decorate with chopped mint chocolate and fresh mint leaves.
Notes
Store leftovers in the refrigerator for up to five days. Freeze slices wrapped well for longer storage.
