  • 2 cups desiccated coconut
  • 1 cup sweetened condensed milk Can substitute with coconut cream sweetened with honey or agave for a dairy-free option.
  • 1/2 cup powdered sugar
  • 1/4 cup butter, melted
  • 1 teaspoon vanilla extract
  • 10 oz chocolate melting wafers or chocolate chips Use high-quality chocolate for smoother coating.
  • 1 tablespoon coconut oil Optional, for smoother coating.
  • Extra shredded coconut for topping

Method
 

Preparation
  1. Gather all ingredients and blend the desiccated coconut, powdered sugar, and melted butter in a mixing bowl.
  2. Add the sweetened condensed milk and vanilla extract. Mix until a thick, sticky dough forms.
  3. Chill the mixture in the fridge for about 10-15 minutes, then roll into tablespoon-sized balls.
  4. Freeze the rolled balls for another 15 minutes to help them hold their shape during chocolate dipping.
Chocolate Dipping
  1. Melt the chocolate and coconut oil in the microwave in short bursts, stirring until smooth.
  2. Dip each chilled coconut ball halfway into the melted chocolate, letting excess chocolate drip off.
  3. Sprinkle extra shredded coconut on top while the chocolate is still wet and place back on the tray.
  4. Chill in the fridge until the chocolate is set.

Notes

For a creative twist, consider adding orange zest or chopped nuts. Use slightly damp hands when rolling to minimize sticking.
