  • 1 3/4 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 2 large eggs Bring to room temperature
  • 1 cup whole milk Bring to room temperature
  • 1/2 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water Add carefully
Frosting Ingredients
  • 8 oz cream cheese Softened
  • 1 cup heavy cream
  • 1 cup dark chocolate chips For ganache
  • 1/4 cup chocolate sprinkles or crushed chocolate cookies For topping

Preparation
  1. Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  2. In a large bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add eggs, milk, oil, and vanilla to the dry ingredients, mixing until well combined.
  4. Carefully pour in the boiling water and mix until smooth.
  5. Pour the batter evenly into the prepared pans and bake for 30-35 minutes, until a toothpick comes out clean.
  6. Cool in the pans for 10 minutes before transferring to wire racks.
Frosting
  1. Beat the cream cheese until smooth, then gradually add the heavy cream, whipping until soft peaks form.
  2. Once the cakes are cool, place one layer on a serving plate and spread a generous layer of cream cheese frosting on top.
  3. Place the second layer on top and drizzle with melted dark chocolate ganache.
  4. Top with chocolate sprinkles or crushed cookies.

Notes

Keep wrapped in an airtight container in the fridge for up to 3 days. Room temperature ingredients result in a smoother batter. Don't skip the boiling water for moist cake.
