Preparation
- Preheat the oven to 180°C (350°F).
- Beat the eggs, sugar, and vanilla sugar for 6-8 minutes until frothy.
- Mix together the flour, cocoa powder, and baking powder, then fold into the egg mixture. Stir in the milk briefly.
- Pour into a prepared baking pan and bake for about 25 minutes. Let cool completely.
Making the Cream
- Melt and cool the milk chocolate.
- Beat the mascarpone with powdered sugar until smooth, then stir in the melted chocolate.
- Whip the heavy cream with whipped cream stabilizer until stiff and fold into the mascarpone mixture.
Assembling the Cake
- Cut the cooled cake horizontally into three even layers.
- Place the first layer on a serving plate, spread half of the cream on top, add the second layer, and spread the remaining cream on it, then top with the third layer.
Making the Ganache
- Heat the cream, add the chopped dark chocolate, let sit for 2 minutes, then stir until smooth. Let cool slightly.
- Spread the ganache over the top layer and sprinkle with chocolate shavings.
Chilling and Serving
- Refrigerate for at least 4 hours, then cut into even slices and serve.

For the lightest cream, ensure that your heavy cream is very cold before whipping it. Use high-quality chocolate for both the cream and ganache for the best flavor. Consider adding a splash of espresso for a richer taste. Store slices in an airtight container in the fridge for freshness.
