Preparation
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the eggs and vanilla extract until smooth.
- In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
- Gradually mix the dry ingredients into the wet ingredients until a thick chocolate cookie dough forms.
- Fold in the chocolate chunks.
- In another bowl, beat the cream cheese, powdered sugar, and vanilla until smooth and creamy.
Assembly
- Scoop large portions of chocolate cookie dough and roll into balls.
- Place them on the prepared baking sheets and use your thumb or the back of a spoon to create a deep well in the center of each cookie.
- Fill each center with a spoonful of the cream cheese mixture.
Baking
- Bake for 11–13 minutes, until the edges are set and the cookies look soft in the middle.
- Let the cookies cool on the baking sheet for 10 minutes, then sprinkle with chopped chocolate.
- Transfer to a wire rack and let them cool completely, or enjoy slightly warm for the ultimate gooey bite.
Notes
These cookies are best enjoyed warm, served with coffee or milk. For added flair, drizzle melted chocolate on top after baking.
